SOPAPAILLAS (Anna Ulibarri)
4 cups flour 1 tbsp lemon juice
4 teaspoons baking powder 1 egg
1 teaspoon salt 3/4 cups lukewarm water
Mix all ingredients to make a dough that's soft but not sticky. Roll 1/8 thick and cut. Fry in hot oil. Serve plain or with honey.
3 cups flour (for about 30 sopaipillas) 1 egg, well beaten
1 teaspoon salt 3 Tablespoons shortening
3 teaspoons baking powder or 1 package dry yeast
Sift dry ingredients into bowl. Cut in shortening, make a wall in center of flour mixtrure. Add 1/2 cupl warm water (containing yeast if used) and egg. Knead until smooth. Let stand for 15 Minutes. Break off into pieces and submerge in deep, hot fat, around 400 to 425 degrees, until golden brown.
